Ingredients
  

  • 1 cup cottage cheese
  • 1/4 cup reserved hot pasta water
  • 1 garlic clove
  • 1 tablespoon fresh basil or parsley
  • 1/4 cup grated Parmesan (optional)
  • Salt and black pepper to taste
  • 8 oz cooked pasta

Method
 

  1. Add cottage cheese, garlic, herbs, and Parmesan to a blender.

  2. Pour in hot pasta water and blend until completely smooth.

  3. Season with salt and black pepper, blending again to combine.
  4. Pour sauce over hot cooked pasta and toss until creamy.

  5. Adjust consistency with more pasta water if needed, then serve with extra herbs and pepper.

Notes

Use full-fat cottage cheese for maximum creaminess, or low-fat for a lighter version. Add lemon zest or red pepper flakes for extra flavor. Sauce can also be used in baked pasta dishes.
