- Add cottage cheese, garlic, herbs, and Parmesan to a blender.

- Pour in hot pasta water and blend until completely smooth.

- Season with salt and black pepper, blending again to combine.
- Pour sauce over hot cooked pasta and toss until creamy.

- Adjust consistency with more pasta water if needed, then serve with extra herbs and pepper.

Notes
Use full-fat cottage cheese for maximum creaminess, or low-fat for a lighter version. Add lemon zest or red pepper flakes for extra flavor. Sauce can also be used in baked pasta dishes.
